We take the room back to something we can build on, then set cabinetry plumb and level so the doors and drawers line up the way they will stay lined up.
Countertops go on a substrate we have checked ourselves, backsplash tile gets laid out so the cuts land where nobody looks, and the island is sized around the way you actually cook rather than around a showroom photograph. Plumbing and electrical are roughed in before anything closes up, and the appliance openings are measured off the appliances you bought — not off a catalog.
